Janet's Tzatziki sauce

1 cucumber, peeled and diced
1 c. plain yogurt
1/4 c. fresh lemon juice
2 cloves garlic, mashed
Blend all ingredients in blender or food processor. Add salt to taste.

Janet's Tahini Sauce

1 c. tahini paste (sesame butter or paste)
1/2 c. fresh lemon juice
3 cloves garlic, mashed
1 1/2 t. salt
3/4 c. plain yogurt
Mix all ingredients.

Cindy and Janet's Tabbouleh--Middle Eastern Bulgar Salad



1 c. bulgur, cooked
1/4 c. chopped green onions
3 medium tomatoes, chopped
1/2 c. finely chopped parsley
2 T. finely chopped mint

Salad dressing
1 large clove garlic, mashed or finely chopped
4 T. lemon juice
1 t. salt
1/2 pepper
6 T. olive oil

Combine bulgar with all other ingredients. Toss lightly with dressing.
This dressing is light and delicious on any salad.

*Note: Couscous can be substituted for bulgar.
