1 c. bulgur, cooked
1/4 c. chopped green onions
3 medium tomatoes, chopped
1/2 c. finely chopped parsley
2 T. finely chopped mint
Salad dressing
1 large clove garlic, mashed or finely chopped
4 T. lemon juice
1 t. salt
1/2 pepper
6 T. olive oil
Combine bulgar with all other ingredients. Toss lightly with dressing.
This dressing is light and delicious on any salad.
*Note: Couscous can be substituted for bulgar.
