Bulgar

Bulgar
What is bulgar? Bulgar is wheat that is boiled and dried. The advantage to using bulgar is that it is rice-like grain that can be used any way you use rice, and  is table-ready in minutes. It is nutty and flavorful. You often find bulgar in Middle Eastern recipes.

To make bulgar:
Choose one of the  methods listed above to cook wheat berries, then pour the soft-cooked  wheat onto a cookie sheet or broiler pan. Place pan in 200 degree oven, and cook  until wheat kernels  are dry. 
Bulgar can be crushed into coarse pieces, or used as is. Store as you would any grain.

Cooking bulgar: 
1 c. bulgar to 2 c. water
Bring water and bulgar to a boil. Cook 10 minutes. Drain water. Salt to taste.
