Dee's Pinto Bean Muffins



2 c. flour

1 tsp. salt

2 tsp. baking powder

2 eggs

1 c. mashed, cooked pinto beans (can use canned)

1 c. milk (can use powdered)

4 tbsp. melted butter (or oil)

2 tsp. honey

Mix dry ingredients. Beat eggs; then mix in mashed beans,

milk and butter. Add to dry mixture and mix just enough to

moisten. Fill muffin tins half full and bake at 400 for 20-25 min.

Serve with honey or jam.
