Refried beans

2-3 c. cooked pinto or other beans
1/4 c. oil or bacon fat
2 cloves garlic, minced
1 medium onion, chopped
1 chili pepper chopped
1 tomato chopped
grated cheese
cooked bacon
Saute garlic and onion until onions are golden. 
Add beans and mash together with onions and garlic.
Stir fry for a few minutes.
Add grated cheese and continue cooking until cheese is melted.
Toss in pepper, tomato and cooked bacon and a sprinkle of hot sauce if desired.
