Tapioca Pudding

From Tapioca package
1/3 c. sugar
3 T. tapioca
2 3/4 c. milk--fresh, powdered or canned
1 egg
1 t. vanilla
Mix sugar, tapioca, milk and egg in medium saucepan. Let stand for 5 minutes.
Cook on medium heat, stirring constantly, until mixture comes to full boil. Remove from heat.
Stir in vanilla. Cool 20 minutes, stir and serve.

Tapioca serves to thicken fruit pies, also. Add 1/4 c. tapioca to your fresh fruit filling.
