Valerie's Egg Noodles

1 egg

1/2 tsp salt

1 cup flour

2 T. water or milk (maybe a little more)

Mix flour and salt. Make a well in the center and add egg and water; toss with fork, then kneed. Dough

should be stiff. Roll very thin on a floured surface then cut with a knife or a pizza cutter. (Or use a pasta machine)

Use right away, (drop into boiling broth, cook till as done as you like) or let dry and store.

Makes about 6 oz. noodles.


These are fun to make, don't take very long, and are very good in homemade soups. Children will enjoy helping make these noodles.


*Note: whole wheat, or flour made from other grains can be used in this recipe. The noodles will be chewy, but good.
